THREE L. A. CLUBS COMING MONDAY
Three clubs from Los Angeles, the Turn Verein, Germania and Los Angeles Mixed Chorus will help the Concordia Club here celebrate Labor Day, the first named participating in a tug of war against a team composed of the strongest Anaheimers available and the two latter helping in the afternoon concert.
Onion cake, a rare German delicacy, and fresh liver-and-blood sausage made by experts of the Anaheim Deaf Co. will be served beside sater kraut and other German delicacies.
The doings will start at 10 a.m. and continue until midnight, including a grand ball at night and an athletic exhibition during the afternoon.
President John Cordes will welcome the merrymakers.

CUTS 'UNTRUE' WIFE OUT OF ESTATE
SACRAMENTO, Aug. 29.—Disheriting his wife on the grounds that "she had yeen untrue to me," Charles B. Harris, well known local attendant, who died recently, left a will that created a sensation when it was filed for probate in the superior court.
The entire estate approximating $10,000 is divided, share and share alike, between decedent's three brothers, Earl D., William E., and George N. Harris.
A portion of the will reads as follows:
"I do not devise or beqeath anything to my wife, Sue E. Harris, sometimes known as Susie E. Harris, because she has been untrue to me, in that she has committed adultery with one, Iven E. Crombach, for a number of years past."
"There is no question in my mind about her unfaithfulness. I have made a thorough investigation, and am convinced that she has been untrue."

Much Opposition To Defense
BALTIMORE, Aug. 29, plotting a cycle extending hundred and thirty years Henry light station, the beacon on the coasts of the States, now makes use of electric lights in send friendly rays out over the waters at the mouth of the peake.

Much Opposition To Defense Day Due To Misunderstanding
Editor:
A great deal of opposition to the Defense Day Test as outlined by our government is based for the greater part on a misunderstanding and a misconception of its fundamental purpose, due to the lack of correct information. Below are a few questions and answers regarding this day, as compiled by Major General Chas. G. Morton, commanding the Ninth Corps Area. These will enlighten the public and will assist our citizens, both civilian and military, to a better understanding of the entire subject.
Q—What is the Defense Test?
A—An explanation and tryout of plans prepared for our national defense with added patriotic ceremonies.
Q—What is its purpose?
A—Its primary purpose is to enable our people to see for themselves and to understand the initial steps necessary to muster our man-power for national defense.
Q—What are some of these initial processes?
A—the filling to full strength of the various units of the army of the United States and the steps necessary to provide for their supply, shelter, payment, training, medical care and attention, etc.
Q—Why is it necessary to hold a "Defense Test"?
A—Because in our past emergencies, from the time of our Colonial wars, up to the beginning of the World war, we have had no adequate plans for maintaining troops through an emergency. We have heretofore been forced rarely upon hastily created bodies and there have resulted delay, confusion, duplication, of effort, extravagance and unnecessary loss of life. Every generation has paid and the present and future generations must still continue to pay the price of this past lack of foreight and preparation. The present system contemplates that as much of this preparation as possible be made during times of peace and not at a time when our national security may be at stake.
Q—Of what will the Defense Test consist?
A—Of "patriotic demonstrations" and a "test of mobilization plans."
Q—Where will it be held?
A—In every city, town and other community in the United State.
Q—How is it to be conducted?
A—By state and local civilian committees acting in conjunction with local military commanders.
Q—What are these state and local civilian committees to represent?
A—It is intended that these committees shall represent the state and local agencies which, in an emergency declared by congress, would be used in procurement of man-power under either a voluntary or selective system.

TODAY'S RECIPES
Fried Egg Plant—Peel and slice a fresh eggplant, dip in egg and roiled crackers, salt to taste and fry;
Cabbage Salad—Chop cabbage fine with same amount of celery, add chopped whites of eggs. Mash yolks of eggs fine and to a smooth paste, mix with butter and a little vinegar and mustard; mix with cabbage mixture. Just before serving mix cream salad dressing with it.
Roast Shoulder of Veal—Allow 20 minutes to the pound and 20 minutes longer for roasting veal. Make a dressing of bread crumbs, onion and sage, seasoned with salt and pepper, and fill a pocket in the veal. Or, if you prefer, put the dressing in one end of the pan half an hour before serving time. Surround the meat with raw potatoes three-quarters of an hour or an hour before it is done and cook them with the meat. If they are not brown enough when you take the meat out you can finish them on top of the stove in the meat gravy. A few slices of bacon spread over the veal while cooking will give a nice flavor and provide the necessary fat for basting.
Roquefort Dressing—Cream two ounces (four tablespoons) of soft, ripe Roquefort cheese into six tablespoons of olive oil. Mix two tablespoons vinegar or lemon juice with one-third teaspoon salt and white pepper and paprika to taste, add slowly to the oil and cheese, blending carefully. Put a clove of garlic in a crust of bread and marinate with the bread and dressing for half an hour in the icebox. Remove crust and serve over head lettuce.
Sour Cream Cake—Cream one-quarter of a cup of butter, blend in one and a half cups of sugar, then add beaten yolks of four eggs, a pinch of salt, one cup mashed potatoes, half a cup of ground chocolate, one cup sour cream, then alternate with the stiffly whipped whites of the eggs the following sifted ingredients: One and one-half cups of flour, one level teaspoon of soda, one teaspoon each of cloves and cinnamon, two level teaspoons baking powder and when the flour and eggs are all mixed into the gake, add one cup of walnuts floured, and any preferred flavoring. You may need to add a little more flour. Bake in moderate oven.

Remember, it is not necessary to keep vegetables boiling furiously. Have the fire high to start the cooking and then just keep them boiling gently for the time required to make them tender.
Asparagus, 15 to 20 minutes.
Beans, Butter or String, 45 minutes to 1 hour.
Beets, 45 to 60 minutes.
Cabbage, 30 to 45 minutes.
Carrots, 45 to 60 minutes.
Cauliflower, 30 to 45 minutes.
Celery, 30 to 45 minutes.
Corn, green, 7 to 8 minutes.
Hominy, 1 to 2 hours.
Macaroni, 20 to 30 minutes.
Onions, 30 to 45 minutes.
Parsnips, 30 to 45 minutes.
Peas, 15 to 20 minutes.
Potatoes, 20 to 30 minutes.
Rice, 15 to 20 minutes if you do not use a double boiler.
Spinach, 20 to 30 minutes.
Squash, 20 to 30 minutes.
Tomatoes, 15 to 20 minutes.
Turnip, 20 to 45 minutes.
