SPECIAL XMAS EDITION THE ORANG Famous Pastry Chef Has Tasty Bran Dish Francois Schmitt A BRAN pudding, termed by those to whom it was served as simply delicious, has been evolved by Francois Schmitt, pastry chef of the Hotel Pennsylvania, New York. The titular head of the big hostelry's pastry kitchens, pleased with the enconfusions of his pudding, graciously made it public and here it is, with ingredients sufficient for six covers: Four heaping teaspoonfuls bran, one tablespoonful flour, one-half tablespoonful corn starch, four eggs, three tablespoonful sugar, one-half cup butter, one-half pint milk. The titular head of the big hostelry's pastry kitchens, pleased with the connoisseurs of his pudding, graciously made it public and here it is, with ingredients sufficient for six covers: Four heaping teaspoonfuls bran, one tablespoonful flour, one-half tablespoonful corn starch, four eggs, three tablespoonful sugar, one-half cup butter, one-half pint milk. Chop up butter with flour, corn starch, bran and half of the sugar and add to boiling milk; stir well on fire for about one minute, take off, mix in the four yolks. At last add the four whites beaten stiff with rest of sugar. Pour in well buttered and sugared form and set in pan with a little water in bottom and bake in medium oven for about thirty minutes. Serve with apricot sauce made at follows: Put contents of one small can of apricots through a sieve, add one half pound of sugar and let boil for about five minutes. NO NATURE LOVERS IN PRISON, CLAIM CHICAGO, Dec. 11.—Not a solitary dyed-in-the-wool fisherman or nature lover is ever found behind prison bars. So declared the Rev. Preston Bradley, pastor of the People's Pulpit, at a recent meeting of the Izak Walton club. "Bad men have no love for the out-of-doors," he said. "They can't stand to be alone with themselves. Statistics show that not one of the major criminals of today liked to fish, loved a dog or smoked a pipe." DRIVE OF KINDNESS STARTED BY CO-EDS EVANSTON, Ill., Dec. 11.—Coeds of Northwestern university have opened a "campaign of kindness" on the North Shore. The sororities have discontinued their regular semester dances so that the money usually expended on them can be donated to charity. Entertainment of twenty-five Chicago factory girls for an entire Saturday was the first act of kindness the girls arranged.
