SUNDAY BREAKFAST: Stewed apricots • Scrambled eggs Weber's toast, honey butter Milk • coffee DINNER: Stuffed pork chops • Creamed new potatoes Stewed tomatoes • cole slaw Weber's Bread, butter Strawberry shortcake • beverage STUFFED PORK CHOPS 4 double rib pork chops ½ c. finely diced celery 1 c. fresh Weber's bread crumbs 2 tsp. melted fat Flour ¼ tsp. poultry seasoning Milk 1¼ tsp. salt Have pocket for dressing made on inside of each chop, with opening between two bones. Mix crumbs, seasonings, celery, fat. Stuff chops. Place in shallow baking dish, sprinkle with flour. Pour milk to about ½ inch, not covering chops. Cover baking dish, bake in moderately slow oven (325°) about 2 hours. Remove cover for last half hour. Serves four. Beat eggs with milk. Dip each sandwich into egg mixture, coating both sides. Brown sandwiches in small amount of hot shortening in skillet. Combine with diced chicken; put through food chopper. Add strained soup and remaining ingredients mixture. Place in greased loaf pan, bake in moderate oven (350*) about 50 minutes or until firmer. Saute onion in fat, add corned beef hash, catsup, heat well. Spread mixture on toasted side of bread. Sprinkle ¼ c. grated cheese on each. Toast in broiler until cheese melts. Melt margarine in skillet, add sliced onion, saute just until tender. Spread layer of meat mixture in pie pan, add layer of onion, remaining meat mixture. Score top wedge fashion. Bake in moderate 350° oven about 1 hour. TUESDAY RY MEAL! BAKED EGGS 1½ c. grated American cheese 2 c. toasted Weber's Bread cubes 4 hard-cooked eggs, halved Saute green pepper in a little butter or margarine, add diced pimiento, condensed mushroom soup. Stir while adding milk, cheese, 1½ cups toasted bread cubes. Arrange halved eggs in well-greased baking dish, pour sauce over eggs and top with remaining ½ cup toasted bread cubes. Bake in moderate oven (350°). Serves 4.
